Monday Meal Plan : Blizzard Dolley edition

I was on such a roll for a while with these meal plans! Ugh. Oh well, back on the proverbial horse I suppose. Today is technically Tuesday but my work Monday (we had a snow day and a suggested/mandatory stay-indoors-do-not-drive-anywhere day yesterday because of high wind speeds, powder, and otherwise obscene blizzard traffic, as in white-out driving conditions at a moments’ notice); so I hold that I am still posting this in a timely manner for “Monday Meal Plan.”

On another note, we’ve got a busy week planned for the Dachtler household as Dylan works, I’ve got a couple of presentations, and it’s my birthday tomorrow! Yay! I know that some people say the shine wears off a bit after so many years, but I still get that anticipatory glee the night before and the morning of. Secretly, or not so secretly, I hope that never wears off.

Monday Meal Plan : 2.18-2.24

2.18 Monday (No school)
Snow day! We ate raspberry cream cheese strudels with coffee and hot chocolate for breakfast and then ventured over to Terry & Sheila’s for the rest of the day.
2.19 Tuesday (NS for Ada)
Breakfast: Leftover strudel & donuts, grapefruit & oranges (I love citrus season!)
Lunch: Ada w/Terry
Dinner: Beef stew a la Dylan w/buttery biscuits
2.20 Wednesday Happy birthday to me! (NS for Ada)
Breakfast: Puffed pancakes : Because it’s my birthday!
Lunch: Sack lunches @ work w/Ada
Dinner: @ Texas Roadhouse : Because I’ve been craving steak something fierce.

Revisiting Childhood

I was looking through old photos on our computer, trying to wrap my head around the fact that Ada is going to be five next week and came across a folder full of pictures that she took last summer. Some of them are blurry, over-saturated, movement filled snippets and others are amazingly accurate and clear.

As a parent it’s hard to remember to think about what our kids’ point of view is. Sometimes I forget entirely (<–mother of the year award here!) and find myself grumbling over the next bit of spilt milk here and forget to pay attention to the extraordinary imaginations that my kids are emitting. Carelessly, yes, but at least enthusiastically enjoying themselves and thus being the cause of the spilled milk. I truly couldn’t be more blessed that such a root cause exists. *grumble*grumble*

Anyway, I wanted to share some of these pictures with you. I think it’s interesting (probably only because I’m her mom) to think about what she actually sees and how she sees it throughout her day. Do we really look that blurry? Do we speak in wah-wah tones like all the adults in Peanuts cartoons? Who knows.

Monday meal plan on Friday

I know, I know…disorganization reigns in my house prior to, during, and immediately after holidays. It’s a mess. BUT at least I’m attempting to get back on track, right? Right?!

Dylan works the next few days (those 40 hour weekend spurts are something that the girls and I will definitely NOT miss when he gets his first teaching gig–Dylan too, I’m sure) and will be gone for approximately two breakfasts, two lunches, and five dinners, with approximately four or five snacks. Being the Betty Crockery wife that I am (stifle your snickering, please), I usually try to make a little extra for him to take along for meals. Plus the need for snacks = baking time! Because truthfully, how many sandwiches and cans of soup does one person really want to consume in less than a week? Which, after typing that sentence, I realize it needs a hash tag to call it like it is: #firstwordproblemsfosho 

Monday Friday Meal Plan

12.28 Friday

Breakfast: Cereal and/or toast. Maybe yogurt with honey and blackberries or whatever the girls feel like that’s quick and easy since I have to work.   

Lunch: Ginger garlic chicken porridge. New recipe to try! I’m going to swap out the chicken for turkey since Dad sent us home with a bag of leftovers from Christmas Eve. Yes, I know that tomorrow is probably the last day for them…

Tea Time: Assam w/sugar & milk and cookies. Ada loves this loose leaf stuff I pick up at the international market near our house.

Dinner: Dahl for Dylan and me (deliciousness incarnate and a great pick me up for his cold). Leftovers for the girls, which might seem cruel but there’s a ton of their favorites lingering in the fridge and I hate wasting food.

Cherry chocolate coconut granola. This is to DIE for. Seeeeeriously. My kids eat it for snack by the fistfuls and truthfully, I’m never found too far off. Poured in a bowl with a healthy dash of almond milk and it is my go-to breakfast of choice.

No bake chocolate chip granola bars. Every time I’ve made these they’ve disappeared within the day. Single, double, even a triple batch! Crazy good.

12.29 Saturday

Breakfast: Easy raspberry strudel. Another newbie that’s been sitting in my recipe box for far too long. If I make it the night before it’ll be easy to bake in the morning? Warm strudel and a cup of coffee with my hubby? Hopefully he’ll be feeling better so I can drag him out of bed to spend time with me before he heads off to work his monstrously long day.

Lunch: American goulash. A “newish” recipe that sounds exactly like the stuff I remember devouring from childhood. It’s one of those hotdishy recipes that I get to indulge in guiltless when Dylan works because apparently I married a food snob,

who knew?

Tea Time: Chamomile tea & leftover strudel—if there is any. Or chocolate chip cookies leftover from Nellie’s Cookie Monster cake.

Dinner: Korean ground beef, fried eggs and kimchi. SO good. Quick, delicious,comfort food that’s right up my alley.

12.30 Sunday = All day Pierogi making affair with Sheila! My tummy is I’m so excited!

12.31 Monday

Breakfast: Cereal, toast, whatever floats Dylan and the girls’ boat since they’ll be home. I’ll probably have granola.

Lunch: Leftovers, to make it easy on Dylan and to eliminate waste. Seriously, I hate, hate, hate wasting food!

Tea Time: Whatever Dylan feels like giving them—I’ll be at work.

Dinner: Skillet eggplant lasagna. New recipe to use up the lingering bags of summer stash I have in my deep freeze.

Ranger cookies. I’ve been meaning to try this recipe out and see if it comes close to these cookies that I buy at the grocery store because I dislike having to buy them when I could make them. Anyone else out there like that?

Christmas was, Christmas is

Christmas was…

Lovely and well-fed.

Peaceful and joyous.

Christmas is a reminder of…

The sacrifices given.

The beauty born from healed scars.

The preciousness of life.

The amazing husband that loves me.

The perfection hiding in our imperfection.

I didn’t take many pictures of our week-long whirlwind of Christmassy happenings. Instead, I chose to try to stay in the moment, savoring this holiday and this time together as a family. The regular updates on Sandy Hook splashed across the televisions and on the radio were a morbid, albeit succinct reminder to enjoy the moments given to me with the littles. So I hugged them a little tighter and repressed my disgruntled-too-many-presents-I’m-drowning-in-wrapping-paper attitude a bit longer.

It certainly wasn’t without its bumps and frustrations (and I am infinitely glad that Dylan is as patient as he is). I’ve struggled with whether or not to write about it, it doesn’t seem very Christmassy or seasonally joyful but I think that, just in case there’s one other person like me out there, that I will. Because as much as I love Christmas and as much as I loved spending it with my family, this Christmas was probably the hardest one I’ve weathered through. Because this was the first holiday that I have celebrated post miscarriage.

I hate that word.

Every gift that I opened, every token of love and goodwill from family and friends, was a brief reminder in itself. No onesies, no blue or pink, no congratulations, no baby toys or books or invasive questions or belly touching. Just piles and piles of dolls, play foods, and coloring books. All of which I am very thankful for, and yet, my heart can’t help but twinge a bit at the lack of joy over the coming of a new life. We would’ve been telling people now about the pregnancy. Maybe even Pinteresting a clever manner in which to reveal the news. Facebook posts, blog posts, Instagram and Twitter…

All silent. Save for a Happy Christmas here and there.

I’m struggling to find words to explain my general dourness this Christmas season, which hopefully had enough Santa facade for my girls not to notice, so that I can continue on this journey of healing and growth. But it’s hard. Way.Hard. Hard enough that I’ve been mulling over this post for quite some time and still, after hours of deliberation, are at a loss for words. Which is a strange realization since I felt that I had dealt with the majority of my grief earlier this fall upon hearing the news. Apparently not. Apparently it takes time and continues to hit you in waves days, months, years? afterwards. So much grief for a life never fully realized.

And though I know this matters naught to you, know Mommy and Daddy love and miss you in the fullest sense. Happy Christmas little one.

I’m thankful for…

Day 27: I’m thankful for my home. It’s certainly not the fanciest or the biggest or the newest, but it is ours. It fits my family of four + Moses, the pug, perfectly, and reminds us to be thankful for the things that we have (read: edit our belongings every few months so that we don’t get featured on Hoarders). I’m thankful while it’s not always pristinely clean, it’s a warm and welcoming environment that often smells of something yummy (or not, depending on Nellie’s potty training). I’m thankful that it keeps my children warm and gives them a place to call “home,” a place to feel loved and to call their own.

Our House

Day 28: I’m thankful for Grand Forks. I know, I know. I never thought I’d say that either. But it’s true. I am thankful. I’m thankful that this small city has enabled my family to spend it’s first few years here and the growth its opportunities (and closed doors), its people, and its culture have fostered in us. I’m thankful that we have family near us and that we’ve kept old friends and made new. I’m thankful that my children have great places to go during the day while Dylan and I are at work and school. I’m thankful for the life that we have here (even if the wanderlust bug is never very far away 😉 ).
