Makes 28 Cookies
1 ½ cup flour
1 cup sugar
1 tbsp ground cardamom
¾ cup corn oil
pistachios, finely ground or very finely chopped
1. Line a baking sheet with baking paper. Preheat the oven to 180°C (350°F).
2. Mix the flour, sugar and cardamom togehter in a mixing bowl.
3. Add the corn oil and mix well. Roll into 4 cm (1 ½ in) balls and place on the baking sheet.
4. Bake for 15 minutes (cookies will barely brown). Sprinkle with pistachio’s while the cookies are hot. Allow to cool on the baking sheet.
